The acidity of Chenin, while still present and giving this wine a undeniable tonicity at first, is mildened by a partial malolactic fermentation and the maturation in old oak barrel (without distinctive oak aromas), offering a smooth feeling in mouth, with long lasting flavors of quince and honey. Tasting it in Patrick's atmospheric cellar directly from the barrel, its deep gold color and exquisite quality gave me
